NOT AVOCADO TOAST
In February 2021, we decided to permanently remove avocado from the restaurant menu. The decision came easily, as we made very nice alternative - toast with cashew sour cream, pickled eggplant, sun-dried beets and almonds.
The dish is very difficult to serve, becuase each preparation has become a stew in the kitchen. Cashew sour cream is made for at least 2 days, and if you calculate inattentively the required amount, the dish could stop in the middle of Saturday service, beets were also made for at least 2 days and required a lot of attention, frying and marinating eggplants required a single cook for 3-4 hours. In short - awesome!
But the dish was on the menu for a long time, until the fashion for this format of morning dishes passed.
